From our extensive experience we have developed a policy of applying updates as soon as they are available. This, in some rare cases, may stop some functionality of your site (if a theme is not compatible with an update, for example, the site may not display as intended). The reason for applying updates as soon as possible is for security as sites that are not maintained with the latest updates do tend to get defaced by hackers. We feel that it is much better to work on fixing a site that has a technical issue due to an update than work through trying to fix a hacked site.
Due to the nature of the internet, we can't guarantee against hacking, but, by having your site running the latest updates will certainly help guard against such issues.
